Oleh karena itu, Itiak Lado Mudo pada dasarnya dapat diterjemahkan menjadi \u201cbebek dengan cabai hijau\u201d. Hidangan ini biasanya terdiri dari bebek yang dimasak dengan saus cabai hijau pedas atau lebih sering disebut dengan sambal ijo. Sambal ijo ini terbuat dari cabai hijau, bawang merah, bawang putih, kunyit, jahe, serai, daun jeruk, dan bumbu aromatik lainnya, digiling hingga berbentuk pasta lalu dimasak bersama bebek hingga daging empuk dan meresap rasa sausnya.<\/h6>\n<blockquote class=\"td_pull_quote td_pull_center\"><p><span style=\"color: #000000;\"><i>Hidangan ini tidak hanya populer di Sumatra Barat, namun juga di berbagai daerah lain di Indonesia. Bakar \/ garang sebentar agar bulu-bulu halus hilang dan keluar minyaknya. Cuci bersih itik kembali lalu potong jadi 4 bagian. Lumuri dengan air perasan jeruk nipis lalu diamkan selama 15 menit.<\/h6>\n<\/li>\n<li aria-level=\"1\">\n<h6>Panaskan minyak lalu tumis bumbu halus bersama daun jeruk dan daun salam hingga harum.<\/h6>\n<\/li>\n<li aria-level=\"1\">\n<h6>Masukkan itik, serai, daun kunyit, dan lengkuas. Aduk rata.<\/h6>\n<\/li>\n<li aria-level=\"1\">\n<h6>Tuang santan lalu aduk rata. Biarkan masak dengan api kecil selama 60 menit atau hingga itik empuk.
